VINIFICATION : Hand-harvested, 25kg crates, grapes sorted, destemmed, not crushed, and vatted by gravity. Vinification in small-volume (25 hectoliters) truncated wooden vats, indigenous yeasts, vatting time 18 to 25 days, moderate punching of the cap. TERROIR : 1ha of 35-year-old vines. Vineyard located on the right slope of Pommard (Beaune side) at 330 meters altitude, facing due south. Clay-marl terroir. Yield: 35-40hl/hectares. Aged in cold cellar, 50-80% in new barrels, on lees (16-18 months). Racked one month before bottling.
Appearance
Deep purple ruby.
Aroma
A palette of red and black fruits (blackberry, blueberry, redcurrant, cherry pit, ripe plum). Leathery, spicy and wild notes are also present.
