In a few words ...
Yields are strictly controlled by disbudding to produce a fine, expressive wine. At harvest time, a severe sorting is carried out in the vines and then in the cellar. Fermentation lasts a fortnight, with daily pumping-over. The wine is then aged in oak barrels (1/3 of which are new) for 15 to 18 months. A very light filtration is carried out before bottling, so a slight deposit may appear.
