In a few words ...
Geographical location: Vineyard located in the commune of Crésancy, very close to the famous Sancerre "butte". Soil: Clay-limestone Vinification: The grapes are pressed as soon as they arrive, and the juice flows by gravity into the vats. The must is racked 48 hours later, then kept at low temperature for 4 to 7 days before fermentation. Yeasting or non-yeasting depending on the plot, alcoholic fermentation with thermoregulation. Aged on fine lees.
