In a few words ...
Long, gentle pressing (3h 30) with juice separation and separate treatment. Cold settling after 48 hours. Yeasting (neutral yeast). Fermentation in stainless steel and enamel tanks at low temperature (16° and 18°) for 15 days. Aged on fine lees with stirring. Racking and blending in February-March. Fining. Filtration and bottling.
