Age of vines: 40 years Exposition: South/South-West Vine density/Ha: 6,400 vines Surface area of vines: 1.25 Ha Yield: 40 Hl / Ha Harvesting: Mechanical Vinification Whole grapes are vatted. Alcoholic fermentation between 28° C and 32° C. Short vatting period, about 2 weeks, with daily pumping over for maximum extraction. Free-run and press juices are vinified separately. They are then reassembled for malolactic fermentation. Barrel ageing is not systematic, depending on the vintage.
