The harvest is destemmed and sorted. Extraction is controlled during fermentation to obtain balanced tannins and flavors. The majority of the wine is aged in stainless steel vats for almost a year to retain freshness and fruitiness. The remainder is aged in barrels for the same length of time to obtain a rounder, more complex wine.
