The winemaker

The property receives fresh air from the ocean, where whales play. Winters are mild, and the soils are essentially chalky-clay. These rich but not very fertile soils manage water reserves fairly well, and no heat peaks destroy the grapes' natural acidity. A complement comes from purchases of white grapes from a valley behind the Overberg mountain, where the grapes ripen very late. In this heavenly valley, Bouchard Finlayson makes wines from Pinot Noir, Chardonnay and Sauvignon Blanc, as well as a small quantity of a wine made from Italian grape varieties. Viticultural practices on the estate are unique for South Africa, with a very high planting density (9,000 vines per hectare). The vines are trained in double guyot, and harvesting is manual, with several passes through the rows.
