The winemaker

The Stark-Condé estate is located in the picturesque Jonkershoek valley in Stellenbosch. This is a spectacular valley with abrupt changes in vine elevation from 150 to 600 meters, making for a range of sites with distinct characteristics. The Jonkershoek valley's high-altitude terroirs and textured soils are ideal for Cabernet Sauvignon and other Bordeaux varieties. Jonkershoek wines are often described as elegant and lush, with fine, soft tannins. At Stark-Condé, José Conde is in charge of vinification. He works in the traditional way: fermentation in open vats, meticulous grape sorting, basket pressing and maturation in small French oak barrels. Making wine requires patience and the assurance that the shortest line between two points is not necessarily the right one. Barrel maturation is the key to the elegant wine style for which Stark-Condé is known.
