The domaine rené bouvier is a family-run business founded in 1910 by the grandfather of bernard bouvier, the current owner with his wife. The estate comprises 13 hectares of Pinot Noir and 4 hectares of Chardonnay for a total of 18 appellations in Burgundy, Côtes-de-Nuits-Villages, Fixin and Gevrey-Chambertin, including Premier and Grand Crus. The vineyard is farmed organically (lost in 2016 and in the process of being approved again), with tillage, disbudding, green harvesting, manual harvesting and sorting. In 2006, the domaine inaugurated a new 1,200 m² cuverie, the care taken in vinification and ageing making it a sure bet in Burgundy. When bernard bouvier is asked what makes a good wine, he replies that "it's a wine that makes you salivate, that makes you want to finish the bottle you've uncorked". Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines.
