In a few words ...
For this cuvée, created in 2008, we selected a precise spot on the same terroir as Prédilection (Kimmeridgian marls). A place where the plot is planted on bedrock, so it's very poor, and where the wild boars come to harvest before us! After a light settling, the juice is put into 227-liter barrels for 12 months, followed by 6 months in vats. No mechanical or manual operations are carried out on this wine. A light sulfiting is done just before bottling. 2008 was a turning point for our domaine, a balance between our minds and our growing practices arrived to shake up our wine styles, hence our choice of the name Eurythmie!
