while aligoté has often suffered from its use in kir, making it less noble than chardonnay, the vignerons de buxy demonstrate that this ancient grape variety is above all exclusively from the bourgogne terroir, of which it reflects all the richness and vigor. The vines face due south on the sandy soils of the côte châlonnaise.
the wine:this wine has a pale gold color with slight bright green highlights. Its mineral and green apple notes, with a hint of lemon, give way to an aromatic and tender whole, all supple and round. Its fine, fresh palate is well-balanced.
Laying down and food pairing:vibrant and fruity, it is best enjoyed young, but can be kept for several years. It traditionally accompanies snails en persillade or, more surprisingly, steamed apples or salads. It can also be enjoyed with oysters, charcuterie and andouillettes, or with a local goat's cheese.
