This wine comes from a number of vines with very specific characteristics: controlled yields with strict disbudding, green harvesting if necessary, tillage, no use of fertilizers, protection of the vines that respects the environment and auxiliary fauna. A special feature of the Santenay vineyard is that Cordon de Royat pruning has been installed on almost the entire vineyard, whereas Guyot is still the norm in Burgundy. This method reduces yields and aerates vegetation.
