The winemaker

The Fontfroide vineyard grew up around a jewel of Romanesque architecture: the Cistercian Abbey of Fontfroide, located in Cathar territory. Initially bred to provide each monk with the daily ration recommended by the rule of Saint Benedict, its wines gradually became imbued with the values of the men who produced them. Although the cultivation of vines was abandoned for a time at the beginning of the 20th century, the quest for the absolute endured through the philosophy of Gustave Fayet, ancestor of the current owners. Laure de Chevron Villette, current manager of the Fontfroide estate and great-granddaughter of Gustave Fayet, offers a complete range of wines representative of this exclusive terroir. A range rich in aromas and flavors, including the flagship wines Ocellus and Deo Gratias. Last but not least, we place particular emphasis on respect for the environment, with our HVE 3 and TERRA VITIS labels.
