The winemaker

At the foot of the village of Fontcouverte and the Alaric mountains, vines flourish with their heads in the sun and their feet in the water. Under the rays of the Languedoc sun, the berries ripen at their own pace, the leaves are swept by the Cers and the sea winds, while the roots draw from the soil irrigated by the Jourre stream and the Fontcalel spring. The Mediterranean climate combined with the characteristics of the terroir, atypical of the Corbières, give the grapes unique organoleptic qualities. Each year, at harvest time, we select the best plots of vines. Only 4 hectares are vinified in our private cellar to create the Chante Cocotte cuvées. The grapes are harvested by hand, with double sorting in the vineyard and cellar to preserve the best berries.
