In a few words ...

Origin Pre-selection of eleven parcels located on terroirs at the foot of the Canigou mountain, offering the highest quality potential on the estate. Green harvesting in spring to concentrate the berries. The vines benefit from a special terroir in the middle of the garrigue, with schisto-marble soil and south/south-east exposure. Yield 12 hl / ha Average age of vines 35 years old Elaboration Hand-picked in 10 kg crates from vines selected for their very high quality potential. The grapes don't travel to the winery; the winery travels to the grapes, as the barrels are transported to the terraces where the vines are located. The grapes are directly de-stemmed by hand into new 500-liter demi nuids (approx. 400,000 grains / barrel....). The barrels are then placed in a cold room to bring maceration temperatures down to 0°C for 20 days. Vinification with manual punching down and pumping over to extract the quintessence of the harvested grapes. Long vatting periods. We never use pumps throughout the wine-making process. The wines are aged for 25 months in new demi-nuids. Barrels are assembled by gravity.

Appearance

The wine has an extremely dark, almost Indian-ink color.

Aroma

The nose is very pure, powerful and fresh at the same time, with aromas of blackberry, incense and pencil lead, foreshadowing a beautiful minerality on the palate.

The palate is full and velvety, with blackberry, blackcurrant, black pepper and graphite. The finish, with its restrained acidity, makes our taste buds salivate and gives way to a taste of iodine.
