The winemaker

History


The history of Domaine de la Perdrix begins 200 years ago, in the 1820s. The first of the Gil family arrived and created the foundations of the wine estate. Wine became a true family tradition that was passed down from generation to generation. Over the centuries, the Gil family improved not only the winemaking processes, but also the way they worked in the vineyard.

The estate lives quietly for decades and grows over time. It will reach 32 hectares of vineyards in 1997, when André and Virginie Gil settled. They settled in the village of Trouillas and took over the Perdrix estate. Together, they wish to make discover this jewel that they cherish so much throughout the year. It is from the 2000 vintage that they vinify again in the cellar which was attached to the vineyard.

They attach great importance to the quality of the wines, both out of respect for the ancestors of André's family, and for their shared passion. A passion that can be felt through the vintages, which have been awarded many times with gold medals in agricultural or winemaking competitions. In addition, the couple has made great efforts to accomplish another goal: a conversion of the estate to organic viticulture. The latter came to fruition in 2018...

Biodiversity above all


So it is here, in the foothills of the Pyrenees, that the magic happens. 32 hectares of vines on which one can admire a mosaic of soils with different exposures, altitudes and climatic influences. On some parcels, yields are low but this allows the concentration of the few grapes, which then become of great quality.

The biodiversity is at the heart of André and Virginie Gil's project. Our protagonists indeed seek to listen to and preserve nature, keeping this beautiful balance that the surrounding forests lavish. According to them, this is also the notion of "terroir"!

They have decided to use farming methods in line with their ideas: organic amendments, reasoned soil work and green work that limit treatments. It is through this vision that the grapes arrive as healthy as possible in the winery.

Moreover, the vinifications also follow the organic guidelines (less authorized inputs), thus letting the wines express themselves fully. When blending, André and Virginie have only one goal: to bring out the Mediterranean side of their terroir in the wines they make. To do this, they look for balance, fruitiness, but also tannins and a certain ageing potential during vinification... Once again, the bet is successful !
