VINIFICATION The grapes are harvested by hand on September 12. After two successive sortings of the grapes in the vineyard and in the cellar, slow, gentle pressing produces high-quality musts. No chaptalization is carried out, as the grapes are very ripe. 15% of the wine is vinified and aged in new 500-liter barrels for 9 months. The remainder is aged in vats, with regular stirring of the lees. At the end of these 9 months, the barrels are blended with the vats to create a harmonious blend. Vineyard location: Butte de Tracy sur Loire Average age of vines: 60 years
