Caillottes" are small limestones from the Jurassic-Oxfordian period, mixed at depth with light clays. They appear as a bed of small white stones, shattered by frost and covering the soil surface. These limestones sometimes form very crumbly layers at depth, from which the vine roots draw their minerals. This terroir is renowned for its aromatic intensity and enthusiastic, airy wines.
