The richness of a land, the passion of a man Château de Haute-Serre stands at an altitude of 300 metres, at the crossroads of the Causses du Quercy Regional Park and the Cahors appellation. Among the highest and rarest densities on the plateau, the 60 hectares of vines thrive on the singularity of the Kimmeridgian siderolithic clay-limestone soil enriched with blue clay and iron concretions. The "Georges" cuvée pays tribute to pioneer and visionary Georges Vigouroux, who, in rehabilitating the historic Haute-Serre vineyard in 1971, recognized the potential of this terroir, a biodiversity hotspot. ABOUT THE 2020 VINTAGE 2020 was a "sunny" year, and this great vintage will be recognized in the future for the unquestionable quality of its wines. A mild, wet winter kicked off the year, replenishing the soil's useful reserves. This was followed by a warm, dry, frost-free spring, leading to a particularly early start to vegetation. Summer was very dry, with not a drop of rain until the return of thunderstorms on August 15, allowing the grapes to finish ripening without too much water stress. These conditions, which kept the vineyards in perfect condition, enabled us to carry out reasoned vine treatments. VINIFICATION & AGEING - Rigorous temperature control during vinification. - Aged for 12 months, 50% in 400-liter barrels before blending. - 20% of the volume is aged in amphora and 30% in vats to preserve freshness and fruit. - The wine rests in bottle for 12 to 18 months before release.
