Vineyard: Sustainable viticulture (HVE) Soil: Clay-limestone (Kimmeridgian limestone) Period: Jurassic, 150 million years old Typicity: iron concretions, red clay Location: On hillsides, plateau Altitude: 300m VINIFICATION & AGEING - Light cold settling. - 30% of fermentation in stainless steel diamond vats and 70% in 400-liter barrels. - Aged in vats and barrels, with 25% new wood. - 6 months in bottle before release.
