A delicate, gourmet wine, with notes of peppermint and stewed red fruit, illustrating the uniqueness of Haute-Serre. Vineyard: Sustainable viticulture (HVE) Soil: Clay-limestone (Kimmeridgian limestone) Period: Jurassic, 150 million years old Typicity: iron concretions, red clay Location: On the slopes of the Cahors appellation Altitude: 300m ABOUT THE 2020 VINTAGE 2020 was a "sunny" year, and this great vintage will be recognized in the future for the unquestionable quality of its wines. A mild, wet winter kicked off the year, replenishing the soil's useful reserves. This was followed by a warm, dry, frost-free spring, leading to a particularly early start to vegetation. Summer was very dry, with not a drop of rain until the return of thunderstorms on August 15, allowing the grapes to finish ripening without too much water stress. These conditions, which kept the vineyards in perfect condition, enabled us to carry out reasoned vine treatments. VINIFICATION & AGEING - Rigorous temperature control during vinification. - Aged for 15 months in 225-liter barrels, 30% of which are new. - 20% of the volume is aged in vats to maintain fruitiness and guarantee freshness. - 12 to 18 months in bottle before release.
