I had the pleasure of discovering the Cuvée Harmonie de Gascogne white wine at the Café de Paris in Saint Jean de Luz, where the owner recommended it with our chipirons. We can't go through Saint Jean de Luz without tasting the chipirons à la plancha with white Gascogne harmony, it's a perfect, harmonious combination.
