In a few words ...
The grapes are harvested very early in the morning to avoid oxidation and for the practical purpose of temperature control. The grapes are left to macerate for several hours in the bin to extract as many aroma precursors as possible. The grapes are then destemmed and crushed before being sent to the press. The extracted must is cold-settled, then the fermentation phase begins at very low temperature to preserve all its aromas.
