Indigenous yeasts in demi-muids of 10 to 12 wines, in Pinot noir appellation Sancerre. Racking and disgorging without adding liqueur, after a minimum of 12 months ageing. Extrabrut (9.6gr residual). Zero added sulfur up to and including bottling. 30mg/L sulfur added at disgorgement. Blend of 4 to 5 varieties (Sébins) for 50%, and Petites Saulettes Grises for the remaining 50%. The latter brings supple tannins and astringency to the finish, as well as body. The palate is nevertheless fine and straightforward, particularly vinous. palate and good length.
