Cuvée Didascalie offers a fresh, lively balance between the suppleness of the Ugni blanc - from vines nearly 50 years old - and the freshness of the Roll with its citrus notes. Hand-harvested in the morning to take advantage of the cool night air, the grapes are destemmed, pressed and placed in vats. Before blending, 50% is aged for 9 months in 2-year-old barrels.
