Grape variety: Cabernet Franc Terroir: gravel, former bed of the Vienne (sandy-clay) on montilles (hillocks) with a limestone base and a sandy parcel. Age of vines: 45 to 65 years old Yield: 35 hl /ha Vineyard management: density of 4,500 vines/ha - long, single guyot pruning - no herbicides, insecticides... only contact products - plot 50% grassed. 2nd year AB certification by Ecocert. Production area: 0.5 ha. Annual production: 3,000 bottles Vinification/maturing: harvest date defined by berry analysis and tasting - hand-picked with open-top crates - gravity-fed vatting - alcoholic fermentation in stainless-steel vats with 2 light foot treadings daily for 3 weeks - malolactic fermentation and 12 months' ageing in Bordeaux (Darnajou...) or Burgundy (Dargaud) barrels of 4 to 5 wines. Light sulfiting (<20g/ hl free SO2). Tasting notes: Intense red hue, powerful nose with aromas of fine red fruits, lightly toasted. Round, leaky palate driven by fine acidity and melted tannins. Great length on the palate.
