In a few words ...
For this cuvée, we select plots located on Kimmeridgian marl terroir (white earth). This parcel, planted on a terrace by my father, faces south-southwest. On a hillside overlooking the Loire, this plot enjoys an impressive microclimate. In summer, in the afternoon, the temperature can be scorching due to the reflective white soil and the absence of air. Nights can be very cool, as the Loire River, just a few hundred meters away, creates a very cold mist. This temperature difference is highly conducive to the Sauvignon grape's aromatic development. Hence the name, Parcelle de Prédilection. Vinification is carried out in the same way as Aubaine. Aged for 15 months on fine lees in underground concrete tanks.
