For more than 2 centuries, Maison Louis Latour is one of the most respected in Burgundy. With its vast area of Grands Crus, it produces some of the best wines in the region. Far from fashion and style effects, the great wines of the family home are timeless sure values.
The family house has been run since 1999 by Louis-Fabrice Latour, 11th generation of Louis to take the lead. It is ranked 17th in the ranking of the 200 wine personalities of the Revue du Vin de France in 2018.
Zero Weedkiller, a minimum of sulphite, 100% organic since 1991, the wine estate is surrounded by scrubland with a shepherd and his 220 sheep. At the end of the harvest, Lise, oenologist and manager of Château Pech-Latt, plays music to her grapes, and more specifically "Noir Desire" during winemaking. She then talks to the yeasts inside the grapes and dictates to them the work to be done before the fermentation.
The estate: located in the Corbières in Languedoc-Roussillon, between Montpellier and Toulouse, the vineyard is encircled by hills at the foot of the mountain of Alaric. These high hills create an exceptional climate shelter situation. The first vines were planted around the year 784 by the monks of Lagrasse Abbey. The wine: A blend of Syrah (60%) and Grenache. The old vines (35 years old) bring an aromatic bouquet of scrubland. As famous oenologist Caroline Frey says, the idea of producing "Evidence" came to her "quite naturally, by constantly going back and forth between Ludon-Médoc (Bordeaux) and Tain-l'Hermitage (Rhone). Cabernet-sauvignon comes from the vines producing the second wine of La Lagune (3rd Cru Classé), and the syrah from the vineyards of Domaine de Thalabert, which vinifies the Crozes-Hermitage of Jaboulet ".
This week Twil and Caroline Frey propose you to order Mademoiselle L, the Haut-Médoc of La Lagune, Les Jalets, the Crozes-Hermitage of Jaboulet and the famous Evidence which assembles the grapes of these two wines.
The charm of the Médoc terroir ready to drink: its roundness is based on black Merlot, its complex structure is based on Cabernet Sauvignon, its freshness and its remarkable fruit on Petit Verdot.
The story: as with the Château La Tour de By in the 80s, the Pagès family mobilized all their talent and energy to revive this vineyard with exceptional terroir.

Domaine des Vallettes is above all a family story: Antoine, oenologist, is in the vineyard and the cellar, François vinifies and sells. Since 2001, the Jamet brothers have taken over the wine estate, located near the village of Saint Nicolas de Bourgueil between Angers and Tours, created by their parents in 1986. The vineyard is planted with the Cabernet Franc grape variety.
The barrel aging for this beautiful Saint-Nicolas-de-Bourgueil 2014 required patience, a patience of 5 years now rewarded! From the best plot of the estate, this is the wine not to be missed.
After raising Rol Valentin, Saint-Emilion Grand Cru, at an exceptional level, Eric Prissette has made his winery Villa Symposia one of biggest references of Languedoc.
The wine: L’Equilibre is a Languedoc that is ample and generous with a touch of freshness and minerality which is well presented, rewarded by a beautiful 90 parker. The aromas of black fruit and spices brings a great harmony to the liquorice final. The quality of the wines never ceases to increase year after year.
The vines: syrah, carignan, grenache.
The location: Eric Prissette fell in love in 2003 of that Winery of Aspiran, a small village near Pézenas, North-East from Béziers. The vines are cultivated in Organic farming with an approach of “Biodynamie”.
The little plus: The Winemarker is advised and associated with Stéphane Derenoncourt, Winemaker of famous “crus” like Château Canon-la-Gafferlière.
Nicolas Père & Fils is incarnated by François-Xavier Nicolas, A young wine maker/merchant who wishes to democratize and decomplex wines while revealing at the same time the generosity of the soil of Côtes-du-Rhône.
