WINEMAKING Long, gentle pneumatic pressing, decanting for 24 hours, followed by settling. Fermentation in stainless steel tanks, AGING After 12 to 18 months in stainless steel vats, the wine is prepared for bottling. Homeopathic fining and gentle filtration are carried out if necessary.
