No, we don't distill the trunks of Jura fir trees (that would be a bit dangerous and that's why it's forbidden). Instead, we work with their buds and some thirty plants, which is our recipe for diving straight into the forest. A digestive liqueur, a Pontarlier speciality invented by Armand Guy in 1902, made from the distillation of fir buds and the maceration of thirty mountain plants.
Récoltés à la main autour de Pontarlier, une partie des bourgeons de sapin sont mis à macérer dans de l'alcool surfin puis distillés. L'autre partie est mise en séchage au grenier afin de concentrer les essences aromatiques. Les bourgeons séchés vont ensuite infuser dans la partie distillée apportant tout le goût et les arômes des bois, en accord avec la puissance de la sève de sapin. La superbe couleur émeraude est obtenue naturellement par macération de plante en fin de processus.

With medicinal and herbaceous notes, this liqueur plunges us straight into a walk in the woods, where pine and fir rub shoulders with a hint of menthol that drifts onto notes of incense and oriental spices. The palate stays in the theme with a hint of pepper.
