domaine pattes loup is run by thomas pico, a talented young winemaker based in courgis, in the heart of the chablis vineyards. Born into a family of winegrowers, he returned to the family domaine in the early 2000s after studying in Beaune, with a clear ambition: to produce wines of great purity, faithful to the identity of the terroir. He then founded his own domaine, "pattes loup", gradually taking over parcels of land, often leased, which he manages with remarkable care. The estate has been certified organic for several years, a commitment that translates into demanding practices: manual ploughing, meticulous soil work, naturally limited yields, exclusively manual harvesting and minimal use of sulfur. Thomas Pico's approach aims to preserve the energy of the grapes and the natural tension of the Chablis terroirs. The estate's wines are renowned for their intensity, freshness and precision. They fully express the minerality of Chablis limestone soils, while offering a beautiful aromatic maturity. Pattes loup has established itself as one of the most singular and sought-after estates in Chablis.
