In a few words ...

Since 2004, Courgis-based Thomas Pico has been working his own vineyards, which he immediately converted to organic farming. The estate has grown steadily, and Thomas is now also in charge of the family estate (Domaine de Bois d'Yver), from which his vines originate. In order to respect the terroirs, he refuses to use harvesting machines, imposes total tillage of the plots, located on the left bank of the Serein (four Premier Crus), and limits yields, when it's not nature that takes care of it, as in 2015, 2016 and 2017... vinification using indigenous yeasts, construction of a new winery in 2014: the wines have progressed rapidly. The latest vintages shine with singular brilliance, with extended maturation periods. Domaine Pattes Loup's Chablis Vent d'Ange comes from three parcels close to Courgis: La Menarde, Les Malantes and Pattes Loup, hence the name of the estate. The vines were planted 40 years ago, as a result of massal selection. This wine was aged for a minimum of 18 months, two-thirds in stainless steel, one-third in 7hl cement eggs.
