This cuvée is essentially made from 100% Mauzac, like the cuvée réservée. It is aged longer both before blending and in the bottle, giving it greater roundness. Traditional method. Temperature-controlled first fermentation, blending of several harvest years, aging on lees in bottle for 3 years, manual riddling and disgorging on the fly.
