The winemaker

Guinot helps market the first Blanquette de Limoux

Blanquette de Limoux was the first naturally foaming wine created during the 16th century. In 1875, Ernest Andrieu and his son-in-law, Gédéon Guinot, created Maison Guinot and developed the process for making Blanquette de Limoux Méthode Traditionnelle. The wines quickly made a name for themselves, reaching Tsar Nicholas II of Russia, who appreciated them greatly. The first gold medal was won at the Exposition Universelle in Paris in 1889. Since then, there have been numerous awards and recognitions. In 1986, Michel Guinot took over the management of the company. He was joined in 2015 by his son, Sébastien, who represents the 6th family generation.

The House of Guinot and respect for ancestral traditions

The family's 28 hectares of vines are spread over three estates around Limoux. The family owns Domaine Saint Jean, Domaine de Taïch and Salle de Saint Polycarpe. The land is all classified as Premier Cru. The land is cultivated using reasoned methods. Vinification is carried out using traditional methods, with as little use as possible of machinery. After vatting, natural yeasts create the bubbles in the bottle. The wine is then aged on its lees for two to five years. Finally comes manual riddling, a technique that is rare in Limoux and constitutes the identity of the domaine.

Guinot produces terroir-driven sparkling wines

.
Maison Guinot's sparkling wines are divided into 2 appellations: AOC Blanquette de Limoux and AOC Crémant de Limoux. The use of Mauzac, the traditional regional grape variety, is characteristic of these appellations. In Maison Guinot's Blanquette de Limoux, it reaches 90%, and even 100% in certain cuvées. It is accompanied by chardonnay and chenin, which complement its aromatic power. Crémant de Limoux is mainly made from chardonnay. The range includes a crémant rosé that also contains pinot noir.
