The winemaker

The history of Domaine Borie la Vitarele


Domaine Borie la Vitarele was founded in 1990 by Jean-François and Cathy Izarn, with 18 hectares of vines, in the AOC Saint Chinian. The couple has focused on creating a vineyard that respects the environment and biodiversity, intervening as little as possible in the process of growing the vines.

In April 2014, following the accidental death of Jean-Francois, his daughter, Cathy, joined her mother to manage Domaine Borie la Vitarele. Since 2017, Camille has been in charge of the vinification of the estate's production.

The vineyard of Domaine Borie la Vitarele


The vineyard of Domaine Borie la Vitarele extends over 18 hectares, of which 15 are red and 3 are white. The grape varieties are made up of:

for the red wine of 50% Syrah, 40% Grenache Noir, 5% Carignan and 5% Mourvèdre;
for the white wine of 35% Vermentino, 35% Bourboulenc and 30% Clairette.

The average age of the vines is 30 years. Domaine Borie la Vitarele produces an average of 70,000 bottles per year.

The vineyard of Domaine Borie la Vitarele is surrounded by nature and not by a neighborhood that could influence the terroirs. The objective is to protect the environment to achieve the purest possible organic and biodynamic culture.

The terroir is divided into three parts:

The Terres Blanches with a clay-limestone soil, consisting of Eocene limestone and lacustrine marl;
The Schistes with shale and sandstone soils from the Carboniferous period in which the roots of the vines are immersed;
The Crès with soils of rolled pebbles, composed of ancient alluvium of the Orb.

The wines of Domaine Borie la Vitarele


The Grand Mayol

Le Grand Mayol is the white wine of Domaine Borie la Vitarele. This mineral wine is composed of 40% Clairette, 40% Vermentino and 20% Bourboulenc.

Its nose is filled with ripe white peaches and pears, almond, lemon and anise. Its palate is a complex mix of roundness and minerality, with a fresh finish, offering a fine saline touch, enhanced by citrus notes.

Les Terres Blanches

Les Terres Blanches is a typically Mediterranean red wine, made from a blend of 50% Syrah, 40% Grenache and 10% Mourvèdre.

Its nose is rich with red and black fruits, as well as sweet spices. Its mouth is fruity, backed by an elegant and discreet tannic structure.

The Schist

Les Schistes is a spicy, silky red wine made from 60% Grenache and 40% Syrah.

Its nose embalms garrigue, eucalyptus and cherry. Its mouth is dense and deep, carried by silky tannins. Its very particular finish evokes fine touches of mint.
