Planting density: 4000 plants ha Yield: 1.1kg per plant 30hl/ha Growing method: ECOCERT-certified organic and biodynamic cultivation, trellised goblet pruning, winter grassing, light soil cultivation and spring inter-planting, regular inputs of "home-made" compost and biodynamic preparations (horsetail, nettle, cousoude, wicker, rosemary, wormwood, etc.) reinforced with homeopathic doses of copper and sulfur. Harvesting: by hand in 13kg crates; sorted by plot if necessary; freshness sought. Vinification: gentle pressing of whole grapes; light settling; fermentation temperatures around 19°-21°. Ageing: on lees in stainless steel vats and new barrels (10% of the cuvée) Bottling: light filtration
