Harvesting begins as soon as the grapes have reached optimum ripeness. As soon as the grapes are harvested, they are sent to the press to preserve their aromatic potential. This is followed by natural fermentation, which lasts 4 to 8 weeks. Precise temperature control is the most delicate task at this stage: between 13 and 17 degrees. Then, until February, the wine is aged on fine lees. During this period, our Pouilly Fumé blanc develops its unrivalled finesse. As tastings progress, we determine the right moment for bottling. This wine is pale gold in color and a lovely, fresh, fruity and rather fresh, fruity and rather subtle nose. The distinctive notes of gunflint notes of gunflint and minerality to the nature of the soil. The whole wine combines freshness and roundness. It is ideal with fish and shellfish dishes. It also goes wonderfully well with goat's cheese, such as the famous crottin de Chavignol, another specialty of the region.
