In a few words ...
This rosé de macération, also known as "de saignée", is the result of pellicular maceration, which involves fermenting not only the grape juice in vats, but also the skin. It is the natural pigments contained in the skin of Pinot Noir grapes that color the juice and enrich the aromas of Sancerre Rosé. After this maceration, which produces more complex, more vinous beverages, the vat is "bled" or emptied to separate the must from the skins. This technique produces rosés with greater structure and aroma, offering a wider range of possibilities for food and wine pairing.
