VINIFICATION Hand-picked, bunches de-stemmed and crushed. 20-day vatting period. 2 manual punchings of the cap each day, until total immersion of the cap. Blending of grape varieties at vatting. In addition, we use a vacuum press to obtain very gentle presses. Lolo de l'Anhel" therefore contains all these press wines, plus a vat of Carignan. AGEING 100% in vats.
