VINIFICATION Hand-picked, bunches de-stemmed and crushed. Vatting for 28-30 days. 1 manual punching of the cap each day, until total immersion of the cap. Partial blending of grape varieties at vatting. Carignan 65%, Syrah 25%, Grenache noir 6%, Mourvèdre 4%. 100% vat-aged.
