In a few words ...

Grape variety: 100% Pinot Noir Pauline, my great-grandmother, founded this estate in the early 20th century, and it seemed only natural to pay tribute to this enterprising woman. For her, we've made a Sancerre on flinty clay soil, vinified in 300-litre oak barrels. The grapes for "La Pauline" are harvested late. Yields on these plots are deliberately low, and our annual production is between 1,500 and 2,000 bottles. On a terroir of flinty clay in a place called Désert du P'tit Bannon, this poor, arid soil arid soil gives the Pinot Noir grape a complex nose of spices and good aromatic aromatic persistence on the palate of black fruits such as blackcurrant blackberry. This Pinot Noir is ideal for full-bodied, spicy dishes. Pair it with small game, marinated or braised meats.
