This rosé de macération, also known as "de saignée", is the result of pellicular maceration, which consists of fermenting not only the grape juice in the vat, but also the skin. It is the natural pigments contained in the grape skins (pinot noir) that color the juice and enrich the aromas of Sancerre rosé. This technique produces rosés that are more structured and aromatic, offering a wide range of possibilities for food and wine pairing.
