In a few words ...

Viticulture: The vines are single Guyot pruned. The vineyard is cultivated using organic and biodynamic methods. Harvesting: "Empreinte" is made from vines over 50 years old. Average yield: 26 hl/ha. The grapes are harvested by hand in 25 kg crates, then sorted on a sorting table. It is then de-stemmed and conveyed by conveyor belts, for maximum respect of the fruit, to the vinification vats. Vinification : Natural vinification, fermentation with indigenous yeasts. Cellar work follows the lunar calendar. Cold pre-fermentation maceration lasts about 8 days, before fermentation begins. During this period, light punching of the cap is carried out. Vatting time varies from three to five weeks, depending on the vintage. A conveyor belt is used for devatting, followed by light pressing. Then comes the malolactic fermentation and ageing, which takes place in barrels for around twelve months. Production of the "Empreinte" cuvée is around 3,000 bottles.

Appearance

Younger color (garnet) and much denser.

Aroma

The nose reveals notes of almost candied fruit, spices (barrel) and undergrowth (fern).

Taste

Full, ripe and fleshy on the palate, with velvety tannins and fine overall balance (+ freshness). Vigorous, chewy finish.
