Several rackings are followed by 9 months of active ageing, partly in barrels, partly in stainless steel tanks, with weekly batonnages from December to March. The wine is then blended to bring out the complexity of the multiple containers (stainless steel, barrels of different ages and different types of wood - oak and acacia).
Tasting notes
Aroma
The nose must often be called upon to express itself, but the aromas are of great elegance. This wine is often best decanted 1/4 to 1/2 hour before serving. Combining honey, yellow fruit (apricot, peach) and beeswax, the nose also reveals great minerality, the first signs of its gastronomic character.
Taste
On the palate, the attack is frank and fresh, the palate is concentrated and full-bodied, yet perfectly dry. Excellent aromatic persistence.
