The appraisal of broker Guillaume Lawton, as early as 1815, illustrates this well "... it presents itself with great firmness, good color and fairly pronounced sap", (the "sap" of the Médoc's premier crus is nicely defined as "something like the smell that the best sealing wax gives off when burned").
