Before becoming an urban winery, the micro-winery was a former warehouse used to store barrels for the Bordeaux wine trade. The entire classic winemaking process takes place here, with grapes grown organically or biodynamically and harvested by hand. The idea is to demystify the world of wine and wine-making, by bringing the place of production to the place of consumption. No need to go to a château to visit a winery. This urban winery, based in the heart of Bordeaux, works with two winegrowers from the entre-deux-mers region: laurent cassy from domaine de chillac, and sylvain destrieux from clos de la molénie. They also work with a winemaker from the Loire, elisabeth nouteau from domaine du verger. The domaine's aim is to break away from the classics and play with different grape varieties and blends. Maxime rozé is an agricultural engineer and oenologist. For several years now, he has been crisscrossing the world's vineyards, in New Zealand, California, Argentina and, of course, France, discovering the different terroirs and ways of making wine.
