Even today, the vineyards still bear the small, precise tools of the so-called 'tautavel man', just like those needed in those days to survive. In 1996, the vineyards around the villages of tautavel and vingrau were established as the new cotes de roussillon tautavel appellation, and the stony soils have never yielded more than 45 hl/ha. These are the most spectacular terroirs in Roussillon, and one of the wines, 'le cirque', is named after the historic natural amphitheater 'cirque'.
