In a few words ...
Hand-harvested in small crates, the grapes are completely destemmed and transferred to vats for pre-fermentation cold maceration. The temperature is then raised for alcoholic fermentation, during which the grapes are pumped over twice daily to extract tannins and aromas. The wine then undergoes malolactic fermentation, and is aged in stainless steel vats until bottling in June of the following year.
