Domaine de la Gypière is located in the heart of the Provencal vineyards. This charming estate covers 22 hectares of AOP Côtes de Provence. Its name comes from the gypsum quarry that was present on the estate in the 17th century. Our special cuvée "les armoises de la gypière" pays tribute to the molinier mugwort, a protected species under Natura 2000. The Lac de Gavoty, not far from the estate, is one of the few places in the world where this highly aromatic perennial plant grows. The grapes are harvested between 4 a.m. and 12 p.m. to ensure that they do not exceed a temperature of 20°. The harvest is then passed through a heat exchanger so that the berries enter the presses close to the temperature of 10°. The wines are produced by direct pressing, which means that maceration takes place directly in the membrane press. The cycle lasts around 4 hours. On leaving the press, the wines are "stabulated": the temperature is lowered to 4° for 5 days to enhance the wine's fruitiness. Fermentation then begins, lasting around 3 weeks.

Acidic, the palate is elegant and greedy, balancing the freshness of grapefruit juice with the full-bodied volume of white-fleshed fruit.
