In a few words ...
For our Signature white, we wanted the very best. Hand-picked, our finest Rolle (Vermentino) grapes were carefully transported in small crates to the winery. After whole-cluster maceration in temperature-controlled stainless steel vats for 8 days and gentle pressing, spontaneous alcoholic fermentation and malolactic fermentation took place in an ovoid concrete vat (Œuf de Beaune), then in natural sandstone amphorae (Vin et Terre). We chose not to add sulfites and to filter the wine very lightly. The 2022 shows the full potential of the Rolle grape (Vermentino). Production: 2900 bottles.

Appearance
The mustard-colored robe has attractive silver highlights.
Aroma
The nose expresses itself strongly, marked by Mediterranean energies, with aromas of pine, resinous wood and volcanic rock, and notes of egg yolk accompany accents of garrigue.
